AZcat - I agree in general with the comments about keeping the bow in as key to better pointing. You should not be pointing 15 deg lower than board boats. May 2-5deg, that is what I see on my 5.7 compared to board boats.
However, I'd caution the users posting who have experience on 5.0 but who have not sailed a 5.7. While in general the concept is the same, in fact the extra waterline length of the 5.7 compared to the 5.0 makes for a problem. When you push the 5.7 bow down, this extra length means the rudders are farther out of the water, and prone to cavitate/ventilate /stall out more quickly. This is the balance /walking the line I experience when racing the 5.7 - moving forward just to the point before the rudders are going to stall out.
When I sailed my 5.0, I never had that experience, I could bury the bow and still have enough rudder blade in the water.

Anoher thing to consider is the jib sheeting location of the 5.7, on the hull. I'm actually considering moving it inboard, locating it like on a NACRA 5.2.
