I've heard about the benefits of EPO rudders, and am interested in finding a set for my 16. How can I tell the difference between EPO rudders and the stock rudders I have?

From what I've seen, the EPO rudders are typically black and stiff. The stock Hobie rudders are white and pretty flexible. The stock white ones are so soft, you can usually make a dent with your fingernail.

When I look at a Race Hobie 16, I see a different type of rudder casting. They are usually black and alot smaller. Does anyone know what they are called and where I would pick up a pair?

I agree. EPOs are preferred to the standard rudders because they are stiffer which means they don't flex nearly as much as the stock rudders. Be warned though if your rudders were to hit something at anything more than a slow speed you will probably destroy your EPOs. I'd only recommend using them for racing and using your stock rudders all other times since it is easy to change a rudder blade on a Hobie 16.

Hobie 14 sail #17827
Hobie 16 sail #72585
